    Fava Bean, Corn &  Radish Salad

    I can only pack a turkey sandwich for lunch so many times before my taste buds start demanding variety.  The solution?  Pouring out the goodies from my Farm Fresh to You box for the week and putting my thinking cap on.  Fava beans, corn, radishes, cilantro…luckily I opened up my Williams-Sonoma Eat Well cookbook only to find this recipe.  Now THAT is what we call fate, people.

    I substituted the mint that the recipe called for with the cilantro, and red wine vinegar for the cider vinegar.  Work with what you got.  While I’m not typically a big fava bean eater, I have to say this salad was both tasty and satisfying.  The beans have an almost meaty texture that is very filling, and the sweetness of the corn played nicely off the sharpness of the radishes.
